Last week I told you about my love affair with the farmers’ market and included tips on how to make your experience delightful. I wanted to follow up and share the recipe I made this week.
I was visiting Columbus last weekend so didn’t go myself but my trip gave me lots of inspiration for this week’s menu. Here is what I have been cooking up:
Roasted beet and orange salad, soba noodles with broccoli in a tahini sauce and a Heirloom Tomato Caprese.
I re-created the dish and ate it for lunch yesterday and plan on eating it again today. The combination of the fresh tomatoes, olive oil, feta cheese and fresh basil is mouthwatering.
The best part – it only takes 5 minutes to make and you’ll feel great after eating it.

Heirloom Caprese Salad
1 large heirloom tomatoes
1-2 TB olive Oil
1-2 TB of balsamic vinegar
2 oz. Feta Cheese
Fresh basil leaves
Salt and Pepper
Cut the tomatoes in 1/2 inch slices
Put tomatoes, oil, balsamic, feta, salt and pepper into a container with a lid. I use one of the glass containers I use to store my leftovers.
Gentle shake to combine ingredients
Layer tomatoes on a plate and sprinkle on basil.
Serve it with a piece of warm fresh bread or cantaloupe. You can also place it on a bed of brown rice or greens.
