As we transition into September it’s a good time to reflect on your food choices and practicing slowing down will help you bring awareness to how the foods you eat affect mood, weight and health. Remember what you eat literally creates your cells so it’s important to nourish yourself with every bite.

Did you know every single cell in our bodies is replaced in 7 years? Pretty cool.

Even cooler is you have control over what you put in your mouth, the thoughts that you think and if you decide to take a walk after dinner verses parking it on the coach with a cookie.

The little changes you make everyday, good or bad, contribute to how you feel.

Today I want to share a immune boosting and liver cleansing salad. This powerhouse salad includes roasted beets to help filter toxins from the liver, oranges for a boost in vitamin C to support a healthy immune system, and dark leafy greens to round out the healthy combo.

Before you say, “Yuck Beets!” trust me this salad has got more than one person hooked on beets. Since beets are a root vegetable they also have grounding and calming effect of the system as well.

Immune Boost and Liver Cleansing Beet and Orange Salad

  • 2 roasted beets – sliced (learn how to roast beets here)
  • 2 small oranges – peeled and sliced
  • 4 cups arugula (or spring mix or spinach)
  • ¼ cup diced red onion
  • 3 TB sunflower seeds
  • 3 TB olive oil*
  • 1 ½ TB balsamic vinegar*
  • 1 ½ tsp Dijon mustard*
  • *See Basic Balsamic Dressing Recipe

    Mix all ingredients together and serve

    Basic Balsamic Dressing

  • Olive oil
  • Balsamic vinegar
  • Dijon mustard
  • Optional spices: rosemary, oregano, parsley, basil
  • Combine 2:1 ratio of olive oil and balsamic vinegar, then ½-1 tsp Dijon per 2 TB olive oil. Mix with fork till blended then top salad.
