Hi Beautiful Friend,
I just got back from a week at the beach and thoroughly enjoyed being unplugged from electronics—although I have to admit that the urge to check my email and surf the web lingered longer than usual this year.
However, after a couple deeps breaths, I remembered the world wasn’t going to collapse if I wasn’t plugged in. The quiet time gave me a chance to reconnect with the simple pleasures of life – sand between my toes as I walked the beach, riding a wave into shore, and watching the dolphins play.
As you know, it can be difficult to eat healthy on vacation but I made sure start the day off with some greens because they make me feel SO good!
Since we drove, I brought along my trusty Vitamix and whipped up one of my favorite smoothies for the family. Who can resist peanut butter and chocolate? Little did they know I snuck in some spinach too!

To get you started I wanted to share what I whipped up for my family on vacation. None of them could resist peanut butter and chocolate? Little did they know I snuck in some spinach too! It’s delicious and only takes 5 minutes.
Peanut Butter, Chocolate and Spinach Delight!
– Serves One
- 2 cup unsweetened almond milk
- 1 small bananas
- 1-2 TB peanut or almond butter
- 1-2 cups spinach
- 2 TB cocao power (chocolate protein powder works well too if you want an extra protein boost)
Couple ice cubes or stick it in the fridge while you take a 30 minute walk (time permitting of course)
Directions: Toss all ingredients into your favorite blender and blend to desired consistency
