As we roll into Labor Day, I am excited for the leaves to change, to taste a variety of pumpkin flavored dishes, and for football season.
Tomorrow night is our inaugural cousin fantasy football draft (the picture is of my grandpa and some of my cousins – I have over 20!). To be honest, I have no clue what I am doing, but I figured this year I would give it a try. Plus, it is a way for me to connect with my siblings, cousins, and husband.

We will be visiting my in-laws in Michigan. On the schedule is a Michigan game (Blast! I am a Buckeye at heart but tailgating with friends never gets old) and going out on the lake one more time.
In the spirit of Saturday games, I wanted to share a yummy dip recipe. Invite some friends over for a pot luck cookout. It will save you time and the pressure of cooking. Plus, I’ve got you covered on what you will make to share!
Vegetarian Spinach Artichoke Dip
2 cans organic diced artichokes
2 cups organic Veganaise
1 cup organic shredded Parmesan cheese (to make this vegan use Parma Vegan Parmesan or skip the cheese. I’ve done all 3 ways – still delicious). Use a bit extra on the top.
2 cups organic spinach
1 TBS paprika (and a little extra for the top)
Drain liquid from artichokes then break them up with a wooden spoon.
Mix all ingredients in a 9 X 9 pan. Cook covered at 325 degrees for 15-30 minutes or until heated through. Eat with tortilla or pita chips, celery, carrots, endive (my favorite), or jicama. (The last 2 are conversation starters. Have your guests try them out and see if they like them.)
