Happy 4th of July!
Hopefully you have something fun planned today. Get outside, enjoy friends and family, and appreciate the glow of sparklers.
I’ve been working hard behind the scenes finishing up the final touches of the Happy Body Program (starts early August – more details to come soon). This week I experimented with a couple new recipes and took pictures of my creations for you.
In the holiday spirit I wanted to create a red, white and blue dish and voilà the Berry Mint bowl was born.
This might be the easiest recipe I’m shared yet and can be eaten for breakfast, snack or as a side dish. It will make your body very happy.
Strawberries, blueberries, raspberries and blackberries are high in anti-oxidants which combat free radical damage. They are also low in sugar and a refreshing treat for hot summer days.
Berries are in season right now which means that are cheaper! It’s a perfect time to stock up on them for snacks, sides, smoothies or deserts. You can also freeze them so you’ll have some for the fall and winter.
It’s important to buy berries organic since some of them are ranked on the EWG’s Dirty Dozen List. Non-organic berries have pesticides sprayed directly on them and our precious bodies don’t jive well with pesticides. Even though the non-organic ones might be bigger and brighter, experiment with taste testing a organic vs. non-organic strawberry. You’ll taste the difference! Even more incentive to buy them in season or at the local farmers market.
Berry Mint Bowl
- 1 cup strawberries – sliced
- 1 cup blueberries
- 1 cup raspberries
- small handful fresh mint – chopped
- Juice of 1/2 lemon
Combine all ingredients and serve!
