What types of foods do you crave in the summer months?

The seasonal produce favors a variety of leafy greens, fruits and summer vegetables like bell peppers, zucchini, and yellow squash.

Raw foods can help to keep your body temperature cool.

And then there’s ice cream.

I’m all about treats in moderation and come from a family that LOVES ice cream. Since ice cream no longer sits well with my stomach, I’ve got creative getting my fix. These Chocolate Mini Popsicles were born when I was experimenting with including Medjool dates into my meals preparing for labor.

Sometimes you just want a bite of something sweet after dinner, right?

Chocolate Medjool Mini Popsicles

  • 1 can full fat, unsweetened coconut milk
  • ¼ cup Medjool dates (make sure they are hydrated. You can soak them in water for 10 minutes if not)
  • 1 teaspoon vanilla
  • ¼ cup cacao powder (or cocoa powder)
  • Pinch of sea salt
  • Almond milk to thin if needed

Using a food processor or blender, blend all ingredients until smooth. Pour into an ice cube trays and freeze overnight. I pull mine out with a fork. Amazon also sells cute popsicle molds if you want to get fancy.
