My mom got me hip to this sandwich a couple years back and it makes for one happy yogi lunch.

Happy Hippy Sandwich

  • 1 Toasted Ezekiel muffin
  • Lentil or Regular Hummus
  • 1 Roasted Red Pepper – you can make your own or buy them roasted in a jar but make sure to check the ingredients
  • Pickles
  • Lettuce of choice

Layer ingredients on muffin and dig in!

Make it portable. Pack the pickles and roasted red pepper separately. Bring the hummus in a separate container and spread layer sandwich when you are ready to eat.
