I’ve been experimenting with recipes over the past 2 weeks. LOTS of them were bombs.

It stinks to waste food (and money) when experimenting with new recipes, right?

Major bummer, when you thought is was going to be the slam. Or are starving.

This week I’m sharing a twist on the popular No Bake, Energy Balls.

Reese’s healthy cousin. 

I made a double batch to share with family on our road trip last weekend. They were tested and devoured by my Niece, Nephew, Dad, Uncle, Jay’s Step-Dad and Jay.

Reese’s healthy cousin is versatile – an on-the-go breakfast, an afternoon delight or a not-so-guilty dessert.

It’s filled with vegan protein, fiber and superfoods! Plus, it’s no bake (vegan and gluten free). Jack-pot!

Reese’s (Healthy Cousin) Bites

Makes 12-16 bites

  • ½ c peanut butter  (or almond butter)
  • 2 TB chia seeds
  • 2 TB ground flax seeds
  • 1/4 cup pumpkin seeds, walnuts or other nut/seed
  • 1/3 c maple syrup
  • 1 cup gluten free oats – ground in blender or food processor
  • 1/4 cup cacao powder or cocoa powder
  •  2 TB Water (add more if needed)

In food processor (or blender) pulse oats until the are ground.  In large mixing bowl, mix all ingredients with oats until combined.  Rolls into 1″ balls. Refrigerate for 2 hours and enjoy!

Be careful, they are addicting. I make a big batch and freeze some for later.
